HOW TO MAKE KOCOR (CUCUR) CAKE

Kocor (Madura) or Cucur Cake in Bahasa Indonesia is a simple fried cake made of flour, red sugar (palm sugar) and some others ingredients. In Indonesia, you can find it easily in traditional market, and even in restaurant.

How to make it?

INGREDIENTS:

  • 300 gr rice flour ready
  • 250 gr of wheat flour
  • 300 ml coconut milk
  • cooking oil
  • fragrant pandan leaves 2 pieces
  • 500 ml of water
  • 175 gr brown sugar, fine comb
  • 100 gr sugar

PROCESS

  1. Boil coconut milk, brown sugar and fragrant pandan leaves. Lift, strain and set aside.
  2. Mix the rice flour, wheat flour and some sugar solution. Stir by hand until well blended.
  3. When mixing the flour with sugar water, you can use the mixer to facilitate the mixing process
  4. After completion heat iron skillet, pour oil to half the height of the wok ..
  5. The heat of stove oil and heavily influence the bowsprit cake, to be sure before the batter is poured cooking oil has been heated but not too hot. Oil that is too hot can cause fiber and taste a little cake flour.
